Three Pepper Salad (serves 4)

1 yellow pepper, seeded and julienned
1 red pepper, seeded and julienned
1 orange pepper, seeded and julienned
1/2 cup (125 ml) balsamic vinegar
1 btsp (15 ml) honey
1/2 red onion, finely diced
1 tbsp fresh cilantro, finely chopped
salt and pepper to taste

In a large mixing bowl, add all the ingredients together.  Let stand for 30 minutes.  Mix well and serve immediately.
