1/2 tsp salt
1/4 tsp pepper
1/8 tsp ground allspice
2 green onions, trimmed and chopped finely
1 cup small ripe strawberries, hulled and sliced
1 cup small ripe blueberries
1 cup small ripe raspberries
1/3 cup fresh parsley, minced
2 tbsp rice vinegar
In a large saucepan; bring 1 1/2 cups (375ml) water, oil, salt, pepper and allspice to boil over high heat. Add couscous and green onions, stir to fluff.
Transfer warm couscous to bowl and stir in berries, parsley and vinegar. Serve salad warm or chilled.
