Marinated Tomatoes (6 servings)

3 large tomatoes, sliced
1/2 cup vegetable or olive oil
1/4 cup red wine vinegar
1 1/2 tsp Dijon-style mutard
1 clove garlic, minced
1/4 tsp thyme
1/4 tsp salt
1/8 tsp pepper
1/8 tsp basil
1 tbsp finely copped parsley

Place tomatoes in serving bowl, in small bowl, combine next 8 ingredients.  Pour over tomatoes.  Cover; marinate 6 hours.  Garnish with parsley.
