Tomato-Cucumber Salad (4 servings)

2 medium cucumbers, sliced
1/2 cup vegetable juice
1/4 cup vegetable oil
1 clove garlic, minced
2 tbsp red wine vinegar
1 tbsp fresh chopped or 1 tsp dried basil
1/4 tsp salt
1/8 tsp pepper
1/8 tsp cumin (optional)
1 plum or small tomato, chopped
basil leaves for garnish

On large serving platter arrange sliced cucumbers in spiral pattern.  For dressing, in small bowl or covered jar beat or shake next 8 ingredients until well combined.  Stir in tomato pieces.  Pour over cucumbers to evenly coat.  Garnish with basil leaves.

Tip: Cucumbers are a dieter's dream food.  At only 39 calories, a whole cuke fills you up and provides 3 g. of fiber with no fat or cholesterol.
