Sweet Potatoes Cake



2 cups fluor
1/4 tsp salt
2 tsp baking soda
2 tsp cinnamon
1 tbsp baking powder
1 tsp pumpkin pie spice
2 cups mashed sweet potatoes
4 eggs or egg substitute
1 tsp vanilla
1 cup oil
nuts or raisins if desired
2 cups sugar.

Sift dry ingredients together in a large bowl.  Add sugar and mix well.  Add eggs, oil, sweet potatoes and vanilla and mix at low speed for 3 minutes, scraping the sides of the bowl.  Add raisins or nuts if desired and stir in.  Pour in greased sheet pan, bundt, loaf or cuo cakes.
Bake in 350ºF oven until done by sticking toothpick comes clean.
May dust with powdered sugar or whip cream or serve with ice cream.
