2 cups all-purpose fluor
1/4 cup sugar
2 1/2 tsp baking powder
1 tsp ground cinnamon
1/4 tsp salt
1/2 cup chopped walnuts
1 cup milk
2 eggs
1/4 cup vegetable oil
1 small tart green apple, peeled and chopped
1/4 cup golden raisins
Heat oven to 400ºF. Grease and fluor a 12-cup muffin tin or line with paper liners. Combine fluor, sugar, baking powder, cinnamon, salt and walnuts in a medium bowl; make a well in the center.
In another bowl, mix milk, eggs, oil, apple and raisins in a small bowl.
Pour mixture into well. Mix batter until just moistened; do not over mix.
Fill prepared muffin tins 3/4 full. Bake for 18 - 20 minutes or until muffins test done. Cool in pan on wire rack. Makes 1 dozen muffins.
