Zucchini Pickles


2 lbs zucchini
2 small onions, sliced
1/4 cup salt
2 cups white vinegar
2 cups sugar
1 tsp celery seed
1 tsp turmeric
2 tsp mustard seed

Wash zucchini and slice, peel onions and slice thin.  Cover with water and add salt.  Let stand 2 hours and drain throughly.  Bring remaining ingredients to a boil and pour over vegetables.  Let stand two hours.  Bring everything to a boil and simmer 5 minutes. Pour into storage jars.
