1 1/2 cup fluor
1 tsp ground cinnamon
1/2 tsp baking powder
1 cup whole wheat fluor
1 tsp salt
1 tsp baking soda
2 cups paked brown sugar
2 cups finely shredder unpeeled zucchini
3/4 cup oil
2 tsp finely shredded lemon peel
1 tsp vanilla
1/2 cup sunflower nuts unsalted
In bowl stir together the fluors, cinnamon, salt, baking powder and soda. In large bowl beat together the eggs, brown sugar and zucchini. Add oil, lemon peel and vanilla, mix til well blended. Stir fluor mixture into zucchini mixture.
Gently fold in nuts. Pour into 2 greased 8 x 4 x 2 loaf pans. Bake 350ºF (175ºC) about 50 minutes.
