Oven-Fried Fish Fillets (8 servings)

2 pound flounder, sole or perch fillets
1/2 cup fine dry bread crumbs
1 tsp salt
1/8 tsp pepper
1 tbsp parsley flakes
1 tsp paprika
2 tbsp vegetable oil

Combine bread crumbs, salt, pepper, parsley flakes and paprika in a bowl; add oil.  Blend with fork until throughly combined.  Spread on wax paper.
Press fish fillets into crumbs mixture to coat both sides.  Place on nonstick baking sheet.
Bake in a very hot oven 450ºF (230ºC) 12 minutes, or until fish flakes easily with a fork.
