Lemon Cookies


3/4 c vegetable shortening
2 small boxes of Jell-O
3 eggs slightly beateb
3/4 tsp baking soda
1 c sugar
1/2 tsp lemon extract flavoring
2 c fluor

With electric mixer, cream shortening, sugar and pudding mix until light and fluffy.  Add lemon flavoring.  Add eggs and beat well. Combine fluor and baking soda and stir into creamed mixture.  Mix well, dough will be stiff.
Roll in 1 1/2 inch balls and set about 1 1/2" apart on parchment covered cookie sheets.  Bake at 350ºF for 8-10 min.
Do not let them brown at all and do not overbake.
