Hash Browns Casserole


1 lb ground chuck
1/2 cup chopped onion
1 can cream chicken soup (10 3/4 oz/each)
1/2 soup can of water
1 box frozen peas
1 bag hash browns
chredded cheddar
salt and pepper to taste

Brown ground beef in skillet, add onions and peas.  Cook until done, drain.  Put in 13 x 9 casserole dish, add hot soup, cheese and water. Put hash browns on top.
Bake at 350º for about 1 1/2 - 2 hours.

Hash Browns

4 or 5 medium size potatoes boiled, 1/2 tsp salt, 2 tbsp milk, 2-3 tbsp butter, 2 tbsp shallots or green onions, minced (optional), pepper (to taste)

Coarsley shred or grate cold boiled potatoes and heat them in a saucepan with milk, butter, salt and pepper to taste.
Heat some extra butter in a frying-pan, pour in the potatoes and let them brown. Press the potatoes together with a spatula so they will hold together.
Serve in the shape of an omelet.  Or shape balls and flatten.
