2 cups yam, grated
2 cups cooked millet
1 cup smoked ham sausage, cooked
3/4 cup celery
1/2 cup green onion, finely chopped
2 tbsp whole wheat fluor
1 tbsp cajun seasoning
Microwave yams on high about 3 minutes or until soft. Let stand to cool enough to handle. Squeeze with paper towel to remove excess moisture. Place in large bowl.
Add millet, sausage, celery and onions. Mix well.
In a medium bowl, wisk eggs, fluor and cajun seasoning. Add to yam mixture. Drop, using about 1/3 cup (75 ml) for each cake, about 2 inches (2,5 cm) apart on baking sheet, flatten.
Bake in preheated 400 f (200ºC) for 20 minutes or until crisp and golden.
