8 fish fillets
1/3 cup butter
1/4 cup lemon juice
2 tsp salt
1/4 tsp pepper
1 1/3 cooked rice
1 cup (4 oz) sharp Cheddar cheese
10 oz cooked broccoli
paprika
In small saucepan melt butter, add lemon juice, salt and pepper. In medium bowl, combine rice, cheese, broccoli and 1/4 cup lemon mixture. Divide among the fish fillets; roll up and place seam-side down in 11 x 7 inch baking dish. Top with remaining sauce and paprika.
Bake at 375ºF (190ºC) for 25 minutes or until fish flakes with fork. Refrigerate leftovers.
