Chicken Hot Pie (serves 6-8)

1 stewing chicken (4 lbs cut up)
2 quarts water
2 tsp salt
pepper to taste
3 medium potatoes, peeled, coarsley chopped
dough squares
1 onion diced
1/2 cup celery, diced
1 tbsp parsley

Simmer chicken until tender, remove and strain broth.  Add potatoes, onion, celery and parsley to broth and bring to boil.  Cut chicken into 1" pieces, discarding skin and bones.  Add chicken to broth then drop dough squares into boiling broth, one at a time.  When half the squares are added, stir and add the rest.  Cover and cook briskly for 20 minutes or until squares are tender.

Dough squares
2 eggs
1 tsp baking powder
1 tbsp shortening
1/2 tsp salt
1 1/2 cups all-purpose fluor

Mix first 4 ingredients.  Then add fluor until soft enough to roll to 1/8" thickness, cut into 1 1/2 " squares.  A pinch of saffron may be added in mixing dough.
