INGREDIENTS
2 1/4 sifter cake fluor
3 1/2 tsp double-acting baking powder
1 tsp salt
1/2 cup granulated sugar
3/4 cup firmly packed light brown sugar
1/2 cup shortening
1 cup milk
2 eggs unbeaten
1 tsp vanilla
Sift together fluor, baking powder, salt and granulated sugar. In separate bowl sift light brown sugar, then mix with sifted dry ingredients. Add shortening and 3/4 cup milk, beat for 2 minutes until batter is well-blended and glossy. (If electric mixer is used, beat at low to medium speed for same period of time). Add 1/4 cup milk, eggs and vanilla, beat for two minutes. Pour into two, lightly greased, fluores, 8-inch layer cake pans. Bake in moderate oven 350ºF (175ºC) for 30 to 35 minutes. Cool.
Sea Foam Frosting:
Combine 1 cup firmly packed brown sugar, 1/3 cup light corn syrup, 2 egg whites, 2 tbsp water, 1/8 tsp cream of tartar and 1/8 tsp salt. Place in top of double boiler over rapidly boiling water and beat with rotary beater until mixture stands in peaks. Remove from boiling water. Add 1 tsp vanilla and continue beating until thick enough to spread. Frost cooled cake
