Old-Fashioned Creamy Rice Pudding

1/4 cup short-grain rice
1/4 tsp salt
3 tbsp honey or 11/4 cup sugar
1 quart milk
1 tsp vanilla
1/3 cup raisins (optional)
cinnamon to taste

Combine first four ingredients in 5-6 cup baking dish.  Bake at 325ºF (160ºC) for 2 1/2 hours.  Stir often during first hour, 3 times during second hour.  Add vanilla, raisins, sprinkle with cinnamon; bake the last half hour-no stirring.  Good hot or cold.
