8 inch pie:
2 cups water
1 cup plus 2 tbsp sugar
2 tsp cream of tartar
9 inch pie:
2 1/2 cups water
1 1/4 cups plus 2 tbsp sugar
2 1/2 tsp cream of tartar
Bring to a boil above ingredients. Add 25 (or 31) unbroken ritz crackers. Boil for just two minutes. Pour into an unbaked pie crust. Sprinkle with cinnamon. Dot generously with butter.
Bake at 425ºF about 20 minutes, until crust is browned.
