Roast Vege and Feta Pasta (3-4 servings)


Ingredients:

400 gr pumpkin
1 medium red onion
1 medium red pepper
2 cloves garlic, chopped
1 tbsp olive oil
2-3 large portobello mushrooms (about 150 gr)
300 gr penne, rigatoni or other short pasta
1/4 cup evaporated milk or cream
2-3 tsp basil pesto
1/2 tsp salt
about 100 gr feta, crumbled
pepper to taste

Heat oven to 225ºC. While the oven heats, peel and de-seed the pumpkin then cut the flesh into two-centimetre pieces.  Cut the onion into about 12 thin wedges.  Halve the red pepper, remove the seeds and pith then cut into 1 cm strips.
Place the prepared vegetables into a large bowl.  Add the garlic and two tablespoons of oil and toss gently until the vegetables are coated with oil (add the extra oil if required).
Spread the vegetables in a single layer over a teflon or baking paper-lined roasting dish or sponge-roll tin, then place in the preheated oven. After 10 minutes gently turn the vegetables, add mushrooms and return to the oven for a further 10 minutes.
While the vegetables roast, cook the pasta in plenty of lightly salted, rapidly boiling water.  Drain the cooked pasta, return to the cooking pot and toss with the remaining oil.  Add the evaporated milk or cream, pesto and salt and stir to combine.
Remove the roasted vegetables from the oven and cut the mushrooms into strips about 1 cm wide.  Gently stir the vegetables (plus any oil and/or juices) and about two thirds of the feta into the pasta.  Season to taste with pepper and garnish with the remaining feta.

Khasua - "Nan Gyi Thoke"



Ingredientes:

4 cucharadas de aceite
6 dientes de ajo, finamente cortados
1 libra (1/2 kilo) de pechuga de pollo sin hueso, corte en pequeños cubos
Lal Masala - 1 cucharada de chile rojo molido, 1 cucharada de semillas de cilantro molido, sal al gusto, 1/2 cucharada de pasta de ajo y jengibre y una pizca de cúrcuma
1 lata pequeña de puré de tomate
1 lata de leche de coco
1 caja de fettuccini, cocido


Preparación:


Caliente el aceite en un wok, añadir el clavo y remueva hasta que se doren, vierta el pollo y rehogue hasta que este la carne blanca.  Añada los ingredientes del lal Masala y el puré de tomate.
Mezclar de vez en cuando hasta que el aceite se separe de la mezcla.  Vierta la leche de coco y deje que cocine entre 7-8 minutos.
Agregar la pasta y mezcle bien.  Deje que cocine entre 5-6 minutos. Servir caliente.


Para decorar, puede utilizar huevo duro rallado o finamente cortado, chalota o cebolla china frita en aceite de cúrcuma hasta que esté crujiente sin quemarla.

Pasta with Chorizo, Tomato and Basil - Pasta con Chorizo, Tomate y Albahaca

Pasta with chorizo, tomato and basil.
Ingredients: (Serves 4)

vegetable oil, for frying (aceite vegetal)
1 cup basil leaves (hojas de albahaca)
3 chorizo, thinly sliced (chorizo, cortafo fino)
500g truss cherry tomatoes (tomates Cherry)
400g pappardelle (pasta pappardelle)
2 tablespoons olive oil (cucharadas de aceite de oliva)
1 tablespoon finely grated lemon rind (cucharadas de ralladura de limón)
1 clove garlic, crushed (diente de ajo machacado)
sea salt and cracked black pepper (sal marina y pimienta negra partida)
2 x 125g buffalo mozzarella, torn (mozzarella buffalo partida)
Finely grated parmesan, to serve (queso parmesano rallado, para servir)

Preheat oven to 200 degrees.  Heat the oil in a small saucepan over high heat.  Carefully add the basil leaves a few at a time, as they may spit, and fry until crisp.  Drain on absorbent paper and set aside.

Place the chorizo and tomato on a baking tray lined with non-stick baking paper and roast for 15 minutes or until chorizo is golden.  While the chorizo is roasting, cook the pasta in a saucepan of salted boiling water for 10 to 12 minutes or until al dente.  Drain and keep warm.
Add the olive oil, lemon rind and garlic to the pan and cook for 1 minute.  Return the pasta to the pan with the chorizo, tomato, salt and pepper and toss to combine.  Divide the pasta between plates and top with the mozzarella, parmesan and fried basil leaves to serve.

Precaliente el horno a 200ºC.  Caliente el aceite en una olla pequeña a fuego fuerte. Añadir con cuidado las hojas de albahaca, pocas hojas cada vez, ya que pueden salpicar y fría hasta que estén crujientes.  Escurrir sobre papel absorbente y reservar.
En una bandeja para el horno forrada con papel antiadherente, coloque los chorizos y los tomates, asar durante 15 minutos o hasta que esté al dente.  Escurrir y mantener caliente.  Añadir el aceite de oliva, ralladura de limón y el ajo a la sartén y cocine por un minuto.  Vierta la pasta, el chorizo, tomate, sal y pimienta y mezcle.
Sirva la pasta y decore con la mozzarella, parmesano y hojas de albahaca fritas.

Pasta Alla Norma

Pasta alla Norma
Ingredientes:
500 gramos de ‘spaghetti’ o ‘penne’

salsa de tomates:
aceite de oliva
cebolla o ajo
tomates hervidos pasado por cedazo
albahaca

1 kilo de berenjenas
250 gramos de ricota fresca
500 gramos de ricota salada y/o ahumada u horneada
Aceite para freír
hojas de albahaca para la decoracion final

Preparación:
Prepare la salsa, rehogue el ajo o la cebolla en aceite, añada los tomates pelados y àsados por el cedazo (colador), añada sal y albahaca picada.
Corte en cubitos, rodajas o tiras las berenjenas, coloquelas en un tazón con agua y sal, escúrralas pasados unos 5 minutos y  fríalas en abundante aceite caliente hasta que se doren. Póngalas a escurrir en un colador.
Hierva la ‘pasta’ en abundante agua con una cucharada de sal. Cuele cuando la pasta se encuentre al ‘dente’. 
Reparta en platos hondos una o dos cucharadas de ricota fresca, agregue la pasta, condimente con salsa previamente calentada, cubra con abundante cubos de berenjenas fritas y finalice cubriendo el plato con la ricota salada rallada.  Disponga de la albahaca sobre el plato finalizado para darle un toque decorativo.

Linguine with Smoked Haddock, Tomatoes and Spinach (serves 4)


300 gr dried linguine or spaghetti
650 gr smoked haddock fillet
1 (300ml) pot half-fat crème fraîche
250 gr cherry tomatoes, halved
zest of a large lemon
3 tbsp small capers, rinsed
1 (200 gr) bag young-leaf spinach

Heat a large pan of salted boiling water and cook the pasta according to the pack instructions.  Meanwhile, place the haddock in a deep-sided frying pan over the crème fraîche.  Turn the haddock in the crème fraîche a couple of times, then gently bring the crème fraîche to simmering point.  Cover and simmer for 5-6 minutes or until the haddock is just cooked through.
Transfer the haddock to a plate with a fish slice, then remove the skin and break the fish into large chunks.  When the pasta is cooked, drain it, reserving 4-5 tbsp of the cooking water.
return the pasta to its pan.  Add the crème fraîche, strained through a sieve, the reserved cooking water, tomatoes, lemon zest, capers and spinach.  Toss together over a low heat until the spinach has begun to wilt.  Add the flaked fish, season with freshly ground black pepper and heat for a minute or so before piling into warm bowls.

Pasta con Le Sarde

La Pasta con le Sarde es el plato representativo de la cocina palermitana. Combina las sardinas típicas de la costa siciliana con el hinojo de los montes de la isla.

1 kilo de hinojo salvaje
8 filetes de anchoa salada
2 tomates frescos
2 cebollas medianas
aceita de oliva
1 kilo de anchoitas frescas en filetes completamente espinados
azafrán
50 grs. de pasas
50 grs. de piñones
pan rallado
Un paquete de un kilo de macarrones

Empezar a hervir los hinojos bien lavados, en agua ligeramente salada. Colar y apartar. En una cacerola dore la dos cebollas finamente cortadas, añadir y deshacer los filetes de anchoas saladas, luego incorporar los filetes frescos, los dos tomates cortados en cubitos, cocinar algunos minutos y complete con los hinojos cortados sin cuidado.
A los quince minutos de cocinar a fuego lento, poner el azafrán, los piñones y las pasas. Cinco minutos mas y ya está. Hervir los “maccherroncini” en abundante agua salada y cuele. Mézclelo con la tercera parte de la salsa y colóquelo en una gran fuente redonda de cerámica.
Eche el resto de la salsa arriba. En alguna pausa de la ejecución de esta receta, tostar el pan rallado con lo necesario de aceite de oliva, y condimentar como si fuera queso rallado.

Cajun Seafood Pasta (serves 4 - 6)

2 cups (500 ml) heavy cream
2 scalliions (spring onions) green and white parts, finely chopped
1/4 cup chopped fresh parsley
1 tbsp chopped fresh basil
1 tbsp chopped freshthyme
1-2 tsp red pepper flakes, or to taste
1/2 lb (225 gr) shrimp peeled and devained
1/2 lb (225 gr) bay scallops
1/2 cup shredded Gruyere or Swiss cheese
1/2 cup grated parmesan cheese
salt and ground pepper to taste
1 lb (450 gr) fetuccine or other pasta of your choice, cooked according to package directions and drained

Bring the cream to a boil in a saucepan over moderate heat and let simmer uncovered until reduce by about 1/3.  Add the scallions, herbs, and red pepper flakes and simmer for abut 5 minutes.
Add the shrimp and scallops and stir to combine.  Stir in cheeses and cook, stirring constantly, until cheeses have melted and the shrimp are firm and opaque, about 3 minutes.
Adjust seasoning with salt and pepper and serve over cooked pasta.

Spicy Black Bean-Sauce Noodles (serves 2)

225 gr (8oz) dried Chinese egg noodles

For the black bean sauce
2 tbsp black bean sauce
3 tbsp oil, preferably groundnut
2 tbso yellow bean sauce
2 large cloves garlic, peeled and finely chopped
1 tsp peeled and finely chopped root ginger
2 tbsp finely chopped spring onions
2 tsp chilli sauce
2 tsp caster sugar
1 tbsp dark soy sauce
2 tsp chilli oil
2 tbsp rice wine or dry sherry
150 ml (5 fl oz) chicken or vegetable stock
1 tsp cornfluor mixed with 1 tsp water

Cook the noodles in boiling water according to the pack instructions, drain and leave in a bowl of cold water until you are ready to use.
Heat the oil in a wok or large frying pan until moderately hot.  Add the black and yellow bean sauces, garlic, ginger and spring onions and stir-fry for 2 minutes.  Add the rest of the ingredients, except the cornfluor mixture, and cook for 2 minutes.  Add the rest of the ingredients, except the cornfluor mixture, and cook for 2 minutes.  Add the cornfluor mixture and bring to the boil for 30 seconds.
Remove from the heat and let the sauce cool.  Drain the noodles and mix thoroughly with the sauce.  Serve at once, or leave to cool if you prefer.

King Prawn and Zucchini Pasta (serves 6)

500 gr dried linguine or taglietelle
4 tbsp olive oil
4 zucchini, trimmed and cut into sticks about 4 cm long and 5 mm thick
1/2 dried chilli, finely sliced or a pinch of crushed dried chilli flakes
3 cloves garlic, thinly sliced
400 gr raw peeled king prawns
100 ml Prosecco or other dry wite wine
200 ml shellfish or fish stock
4 tbsp double cream (optional)

Put a large saucepan of salted water on to boil.  Drop in the pasta and cook until "al dente".  Meanwhile, heat the oil in a frying pan and fry the zucchini, chilli and garlic until softened slightly.  Season with salt and freshly ground black pepper.
Add the prawns and, when just pink, pour in the wine.  Allow to reduce for a couple of minutes, then pour in the stock.  Reduce for a further 2 minutes, then stir in the cream, if using, and season to taste.  Keep warm over a gentle heat until the pasta is cooked, then drain the pasta and toss into the sauce.  Serve straight away in warm bowls.

Chicken and Tarragon Pasta

175 gr long flat pasta (pappardelle or tagliatelle)
2 chicken breast fillets cut into pieces
2 garlic cloves
100 ml single cream
3 tbsp roughly chopped fresh tarragon
75 gr spinach leaves (thick stems removed)
lemon wedges

Cook pasta, then when cooked add spinach and then drain.
Fry chicken in olive oil, then add garlic, cream, tarragon and 2 tbsp pasta water
Toss all together season and squeeze lemon over.

Ensalada de Fideos (6-8 raciones)

1/2 kg fideos espiral
1 huevo cocido picado
1/4 taza de tocino picado
1 taza de lechuga picada
1 taza de tomates en cubitos
1/4 taza de aceitunas verdes sin semilla
3 cucharadas de perejil picado

Salsa de mostaza
1 yema de huevo
3/4 taza de aceite
1/2 taza de yogurt natural
1 cucharada de mostaza
1 cucharada de zumo de limón
sal y pimienta al gusto

Cocinar los fideos al dente, escurrir y dejar enfriar.  Aparte en un tazón, mezclar los demás ingredientes y añadir la salsa de mostaza a la cual se le añade el yogurt.  Luego, mezclarlos con los fideos cocidos.

Fideos con Fritura de Carne

500 gr Fideos
400 gr carne molida
1 cebolla finamente picada
1/2 pimiento pelado y picado
sal
1/2 cucharadita de pimienta
1/2 cucharadita de orégano
aceite
2 dientes de ajo molido
2 cucharadas de perejil picado

En una olla, poner 4 cucharadas de aceite y calentar, añadir la cebolla, el ajo y el pimiento, freir cuidando que no se queme, ni se pegue, a fuego medio-fuerte.  Cuando la cebolla esté bien cocida, retirarla y añadir la carne molida, dorar cuidando que no se pegue.  Incorporar la cebolla y seguir friendo un poco mas a fuego medio.  Echar sal (unas 2 cucharaditas) y los aliños, revolver bien, bajar el fuego al mínimo y tapar.  Que cocine unos 15  minutos, revolviendo de vez en cuando.  Apagar el fuego y dejar que repose.
Cocer los fideos en 3 litros de agua con sal y un chorrito de aceite.  Ponerlos en una olla, y agregarle la fritura de carne molida y el perejil.  Servir.

Linguine with White Clam Sauce

8 oz. linguine or spaghetti
3 tbsp olive oil
1/2 large yellow onion, finely chopped
6 cloves garlic, minced
2 tbsp fluor
1 lb raw clams, chopped or 1 (6 1/2 oz) can minced clams, drained, rinsed well and drained again
1/4 cup clam juice or low sodium chicken broth
1 cup low-sodium chicken broth
1/4 cup grated parmesan cheese
2 tbsp minced parsley

Cook linguine according to package directions, omitting the salt.  Rinse with cold water, drain and set aside.  Meanwhile, in a heavy, 10 inch skillet, over moderate heat, heat olive oil 1 minute; add onion and garlic and cook, uncovered, until onion is soft about 5 minutes.  Blend in fluor and cook, stirring constantly 1 minute.  Add clams, clams juice and chicken broth and cook, stirring 4 minutes longer.  Stir in cheese.  Add cooked linguine and cook 1 minute longer, tossing well, until heated through.  Mix with the parsley and serve.

Fideos con Crema y Salchicha

1 paquete d fideos (450 gr)
3 litros de agua
3 cucharaditas de sal
aceite
6 salchichas
1 taza de leche
3 huevos
1 lata pequeña de crema
1/3 cucharadita de pimienta
1 cucharada de perejil picado
1 -2 cucharadas de queso parmesano rallado.

Cocer los fideos en mucha agua con sal y un chorrito de aceite, al dente.
Picar las salchichas en rebanadas finas y freírlas un poco
A los fideos colados, agregar la leche, huevos, la crema y una pizca de pimienta.  Cocinar a fuego suave y agregar las salchichas, revolviendo hasta que esté cocido el huevo, debe quedar cremoso, puede añadir también 1 ó 2 cucharadas de queso parmesano rallado.

Las salchichas se pueden reemplazar por:
- tocino picado frito, salsa blanca suelta (en lugar de la leche), la crema y solamente 2 huevos
- champiñones en rebanadas fritos en mantequilla

Miracle Lasagna (serves 6)

1 jar (28 oz) spaghetti sauce
6 uncooked lasagna noodles
1 container (15 oz) ricotta cheese
2 cups shredded mozzarella cheese
1/4 cup grated parmesan cheese

In 2 qt baking dish (11" x 7") spread 1 cup sauce.  Top with 3 uncooked noodles, ricotta sheese, 1 cup mozzarella cheese, Parmesan chese,  and 1 cup sauce.  Top with remaining uncooked noodles and sauce.  Cover.
Bake at 375ºF (190ºC) for 1 hour.  Top with remaining mozzarella cheese, let stand 5 minutes.

Artichoke, Almond and Parmesan Pasta

1 1/2 cups cooked pasta
6 chopped artichoke hearts, cooked
2 tbsp chopped almonds, sliced
2 tbsp grated parmesan
2 tbsp olive oil

In a skillet heat the oil, add artichoke and cook a little, add almonds, pasta and parmesan, mix all and enjoy.

Angel Hair with Balsamic Tomatoes

1 tsp minced garlic
1 tsp olive oil
5 to 6 Roma tomatoes, chopped (28 oz can plum tomatoes)
3 tbsp balsamic vinegar
salt and pepper to taste
1/4 cup chopped fresh basil
1/2 pound angel hair pasta (uncooked)

Saute the garlic in olive oil until lightly browned.  Do this in a skillet large enough to hold the tomatoes later.  Leave garlic in skillet.
Place tomatoes, salt and pepper, basil and balsamic vinegar in a non-reactive bowl and set aside for 10 minutes, stirring occassionally.
Boil water for pasta.  Just before you put the pasta in the water, drain tomatoes and reserve the juice that runs off.  Put the angel hair pasta in the water to cook for the recommended amount of time.
Heat your garlic skillet and toss drained tomatoes briefly just to heat.  They shoul retain their shape.  The pasta should finish cooking (usually no more than 5 minutes for anges hair) at the same time the tomatoes are ready.
Toss the pasta and tomato mixture together and serve with freshly grated parmesan cheese.

Budín de Fideos

Ingredientes

1 paquete de fideos
tocino, salchichas, hot dogs.
3 huevos
3 tazas de leche
sal y pimienta
pizca de nuez moscada

Precalentar el horno a 170ºC.
Se cuecen los fideos, y dejan enfriar.  Mezclar el huevo y la leche, añadir la nuez moscada.  En una sartén dorar ligeramente el tocino, salchichas o hot dogs troceados.
Mezclar todo y se vierte en un molde enmantequillado, espolvorear con queso rallado, llevar al horno aprox 30 minutos.

Meatless Lasagna

Ingredients

3/4 pound Lasagna noodles (about 14 noodles)
1 pint part skim milk ricotta cheese
1/4 cup skim milk
1/4 cup grated parmesan cheese, divided
2 tablespoons chopped parsley
Lasagna sauce (recipe follows)
1 package (8 oz) part skim milk
mozzarella cheese sliced

Cook, rinse and hold noodles according to package directions.  In medium bowl stir together ricotta cheese, milk, 2 tablespoons of the parmesan cheese and parsley.  Spoon 1 cup Lasagna Sauce into bottom of 13 x 9 x 2 inch baking pan.  Cover with 1 layer of noodles.  Spread with half of the ricotta cheese mixture.  Top half of the mozzarella cheese slices.  Cover with sauce.  repeat layering until all ingredients are used, ending with sauce.  Sprimkle top with remaining 2 tablespoons parmesan cheese.  Bake in 359ºF, 30 to 45 minutes.  Let rest 15 to 30 minutes before serving.  Cut into squares.

Lasagna Sauce
In 5-quart saucepan heat 2 tablespoons corn oil over medium heat.  Add 1 cup finely chopped onion (about 1 medium) and 2 cloves garlic, minced; cook stirring until tender.  Add 1 can (29 oz) tomato sauce, 1 can (14 1/2 oz) whole tomatoes, 1 can (6 oz) tomato paste, 2 teaspoons salt, 1 teaspoon oregano, 1 bay leave, 1 teaspoon basil.
