Pani Puri


Ingredients:

1 cup semolina (Rava / Suji)
3 tbsp fine Wheat Fluor (Maida)
1/4 tsp baking soda
oil to deep fry

To make Pani:
1/2 cup tamarind (Imli) pulp
2 cups water
2 tbsp roasted cumin seed (Jeera)
Coriander leaves
3 green chilly (Hari Mirch)
2 tbsp Mint leaves (Pudina Leaves) Chutney
1 tbsp Black salt (kala namak)
2 tbsp Jaggary (gur)

To make pani:

Measure all ingredients, adjust spices and tangyness to taste.  Strain through a wire strainer to remove any rough bits.

To make puri:

Mix sooji, maida, baking soda, salt and enough water to knead a soft dough.  Stand covered with wet cloth for 15-20 minutes.
Make small sized balls.  With help of some dry maida or sooji, roll into thin rounds.
Heat oil in  a pan and deep fry puris till very light brown and crisp.  Drain in a paper towel for a while to dry out the oil.
Store in an airtight container when cool.

Pakora


Ingredientes:
2 patatas grandes
2 cebollas medianas
5 cebollas chinas
1 ají verde
1 berenjena mediana o 6 onzas de espinaca o col
2 tomates
185 gr (6 oz) harina de garbanzos
2 cucharadas de harina
2 cucharaditas de sal
2 cucharaditas de garam masala
1 1/4 trozo de kion rallado
aceite para freír

Preparación:

En una olla coloque las patatas con agua y sal, no deje que se cocinen del todo, pele y parta la patata en trocitos cuadrados muy pequeños, picar finamente la cebolla, cebolla china, aji, berenjena y tomates,  Mezcle con ambas harinas, sal, garam masala y kion, mezcle hasta obtener una masa homogénea, añada un poco de agua si hace falta.

Caliente el aceite, forme piezas del tamaño de una nuez y fríalas hasta que estén doradas.
Escurrir bien para elimicar el exceso de aceite y sirva con chutney de menta.

Chutney de menta:
3 onzas de menta fresca
1 cebolla pequeña
1 - 2 gr de ají
2 cucharadas de azúcar
sal, jugo de limón.

Pique la mente, ralle la cebolla y el ají, añada el azúcar, sal, jugo de limón y mezcle hasta que se forme un puré homogéneo.

Pollo Chana Dal




Ingredientes:

Una pechuga de pollo troceada en piezas pequeñas
1 1/2 taza de Chana dal remojada desde la noche anterior y parcialmente cocida
Lal Masala - 1 cucharada de chile rojo en polvo, 1 cucharada de semillas de cilantro en polvo, una pizca de cúrcuma en polvo y 1 1/2 cucharada de pasta de ajo y jengibre
Sal al gusto
3 granos de pimienta negra
3-4 clavos de olor
1 palito de canela
1/2 cucharadita de semillas de comino
1 cebolla mediana finamente picada
1 lata pequeña de pasta de tomate
4 cucharadas de aceite
agua, la necesaria

Preparación:

Caliente el aceite en un wok.  Incorpore las semillas de comino, pimienta en grano, clavos de olor, canela y la cebolla, rehogue hasta que esté ligeramente dorado.
Añada la pasta de tomate, deje que cocine hasta que el aceite se separe de la pasta. Agregue el lal masala y la sal.  Cocine hasta que el lal masala esté cocido (nuevamente el aceite se separa de los ingredientes).
Añada el pollo, chana dal y el agua, cantidad suficiente para que termine de cocinar el dal.
Cocine hasta que el pollo y el dal esté bien cocidos y la salsa tenga la consistencia que desee.
Sirva caliente con roti y ensalada.

Términos:
Chana dal, son garbanzos pelados y partidos.
Lal Masala, es una salsa que se prepara con los ingredientes que se indican en la receta.
Roti, es el pan plano típico de la comida India.

Pilau Rice (serves 4)

Ingredients

3 tablespoons oil
5 cm (2 inch) piece cinnamon stick
4 cardamom
4 cloves
1 onion, sliced
250 gr (8 os) long-grain rice, washed and soaked for 30 minutes
600 ml (1 pint) beef stock or water
salt

Heat oil in casserole, add the cinnamon, cardamom and cloves and fry for a few seconds.  Add onion and fry until golden.  Drain the rice thoroughly, add to the pan and fry, stirring occasionally, for 5 minutes.  Add the stock or water, and salt to taste.  Bring to the boil, then simmer, uncovred, for 10 minutes, until the rice is tender and the liquid absorbed.

Variation:  Vegetable Pilau
Add 125 g (4 oz) each shelled peas, thinly sliced carrots and cauliflower florets to the pan after frying the onion.  Fry for 5 minutes, then add the rice and procced as above.

Biryani (serves 4 to 6)



Ingredients

8 tablespoons ghee or oil
10 cm (4 inch) piece cinnamon stick
8 whole cardamon
12 cloves
4 cloves garlic, crushed
3,5 cm (1 1/2 inch) piece ginger, chopped
1 teaspoon fennel seeds
1/2 teaspoon chilli powder
1 kg (2 lb) boned leg of lamb, cubed
2 x 150 g (5,2 oz) cartons natural yogurt
150 ml (1/4 pint) water
2 teaspoons salt
500 g (1 lb) Basmati rice, washed and soaked for 30 minuts
1/2 teaspoon saffron threads, soaked in 3 tablespoons boiling water

To garnish:
2 tablespoons ghee or oil
1 large onion, sliced
4 tablespoons flaked almonds
4 tablespoons sultanas

Heat 6 tablespoons of the ghee or oil in a large saucepan.  Add the cinnamon, cardamon and cloves and fry for a few seconds, stirring.  When the spices let out a strong aroma, stir in the garlic, ginger, fennel and chilli powder.  Fry for 5 minutes, stirring constantly.
Add the lamb and fry well on all sides.  Stir in the yogurt a tablespoon at a time, allowing each spoonful to be absorbed before adding the next.  Add the water and half the salt, cover and simmer for 40 minutes or until the lamb is tender.
Meanwhile, fill anothr large pan two thirds full with water and bring to the boil.  Drain the rice and add to the pan with the remaining salt.  Boil for 3 minutes, then drain.
Put the remaining ghee or oil in a large casserole, cover the base with rice and sprinkle with the saffron water, then cover with a layer of lamb.  Repeat the layers, finishing with rice.  Pour in any liquid from the lamb, cover closely with a foil-lined lid and cook in preheated moderately hot oven 190ºC (375ºF) for 20 to 30 minutes or until the rice is tender.
Meanwhile, prepare the garnish.  Heat the ghee or oil in a small frying pan, add the onion and fry until golden.  Remove from the pan and set aside.  Add the almonds and sultanas to the pan and fry until the almonds are lightly coloured and the sultanas plump.
Transfer the biryani to a warmed serving dish and sprinkle with the onion, almonds and sultanas to serve.
