Pollo Kon Pau de Sichuan (6 porciones)

5 cucharadas de aceite vegetal
20 gr de ajo molido
15 gr de jengibre picado
25 gr de cebolla picada en cuadritos
500 gr de pechuga de pollo cortada en cuadritos
25 gr pimiento morrón verde y rojo, cortado en cuadritos
25 gr bambú rebanado
25 gr champiñones
15 gr chile seco
2 cucharadas de salsa de ostras
2 cucharadas de salsa hoisin
5 cucharadas de salsa de soja
2 cucharadas de azúcar
4 cucharadas de vinagre
1 cucharada de ajonjolí
2 cucharadas de salsa de frijol picante de sichuan
2 cucharaditas de fécula de maíz
100 gr de cacahuetes tostados

En aceite caliente, fríe ligeramente el ajo y jengibre, agega la cebolla y fríe hasta que dore.  Incorpora los trozos de pollo y fríelos hasta que estén cocinados a un 80 por ciento.  Si queda mucho aceite lo retiras.  Añade el resto de los ingredientes, a excepción de la fécula de maíz y del cacahuete.  Fríe hasta que el pollo quede bien cocido.  Diluya la fécula de maíz en un poco de agua fría.  Viértela en el platillo y remueve hasta que tome consistencia.
Antes de servir, esparce cacahuetes tostados por encima.

Spicy Black Bean-Sauce Noodles (serves 2)

225 gr (8oz) dried Chinese egg noodles

For the black bean sauce
2 tbsp black bean sauce
3 tbsp oil, preferably groundnut
2 tbso yellow bean sauce
2 large cloves garlic, peeled and finely chopped
1 tsp peeled and finely chopped root ginger
2 tbsp finely chopped spring onions
2 tsp chilli sauce
2 tsp caster sugar
1 tbsp dark soy sauce
2 tsp chilli oil
2 tbsp rice wine or dry sherry
150 ml (5 fl oz) chicken or vegetable stock
1 tsp cornfluor mixed with 1 tsp water

Cook the noodles in boiling water according to the pack instructions, drain and leave in a bowl of cold water until you are ready to use.
Heat the oil in a wok or large frying pan until moderately hot.  Add the black and yellow bean sauces, garlic, ginger and spring onions and stir-fry for 2 minutes.  Add the rest of the ingredients, except the cornfluor mixture, and cook for 2 minutes.  Add the rest of the ingredients, except the cornfluor mixture, and cook for 2 minutes.  Add the cornfluor mixture and bring to the boil for 30 seconds.
Remove from the heat and let the sauce cool.  Drain the noodles and mix thoroughly with the sauce.  Serve at once, or leave to cool if you prefer.
