Minestrone Soup


1 oz butter
2 slices bacon (dried)
1 small leek (sliced)
1 small onion (chopped)
1 garlic clove (crushed)
1 small carrot (thin strips)
1 cebery stick (sliced)
1 medium turnip (tin strips)
2 1/2 pints chicken stock
6 oz schredded cabbage
4 oz green beans (sliced)
3 tbsp peas
1 oz short cut macaroni
4 tomatoes (skinned and chopped)
salt and pepper.

Melt butter in large saucepan, add bacon and fry, remove bacon and set aside.
Add leek, onion and garlicto fat in saucepan.  Cook gently for aprox 8 minutes.  Add carrot, turnip, celery and chicken stock to daucepan.  Bring to boil and simmer 20 minutes.
Add cabbage, beans, peas and macaroni. simmer 20 minutes, add tomatoes and bacon, season to taste.
